Creamy Chicken Pasta


A lush and creamy sauce coating a bouncy, homemade fettucine pasta. Pairing this rich sauce with fettucine means that the pasta can handle the heavier sauce. This is not the dish for weight watchers, but it certainly is for the flavour watchers!

Homemade pasta

  • 50g flour
  • 50g semolina
  • 1 egg
  • Pinch of salt
    OR 110g store bought pasta
  • 140g chicken breast strips
  • ¼ cup cream
  • 1Tbsp cream of mushroom
  • 55g broccoli and mushroom
  • ¼ onion, chopped
  • 1 clove garlic, crushed
  • ½ tsp ginger, finely chopped
  • 3 Tbsp green and red peppers, chopped
  • 1Tbsp Italian seasoning
  • 1.5 cup milk


You will need:

  • frying pan
  • rolling pin and board (if making your own pasta)



  1. Take the cream out of the fridge and bring to room temperature. Bring a large pot of salted water to the boil and add your pasta. For homemade pasta, cook for about 2 mins until almost al dente. For store-bought pasta, cook for 9-11 mins until almost al dente and remove from pot. Run the pasta under cold water so it stops cooking and does not stick to itself.
  2. In a separate pan, cook the chicken in the oil over a medium-high heat until the chicken is almost fully cooked, about 3 mins (We are just trying to get some colour on the chicken at this stage, it will finish cooking through in the sauce). Remove the chicken and set aside
  3. In the same pan, cook the onion, peppers, ginger, seasoning and the garlic for about 2 minutes. Add the veggies and cook for an additional 2 minutes
  4. Add the milk and continue cooking with the lid closed until the veg is cooked through
  5. Add the chicken back to the pot and add the seasoning and stir until thickened. Add the cream and stir
  6. When you are ready to serve/eat, add the garlic and pasta to the sauce and cook for an additional 2 minutes or until pasta is al dente or the doneness you prefer. If you prefer a thinner sauce or your sauce gets too thick while your pasta is still cooking, you can add a splash of milk or water and continue cooking till pasta gets to your preferred doneness and season.
