Shakshuka is a popular North African and Middle Eastern breakfast dish made by poaching eggs in a spiced tomato sauce. Popular all over the world, this hearty and healthy meal is so satisfying you can have it any time of the day (we definitely have!)

  • 1/3 of a can of tomatoes
  • 2 Eggs
  • ¼ small onion, chopped
  • ¼ cup bell peppers, chopped
  • 2 garlic cloves, crushed
  • 1 Tbsp bbq seasoning
  • ½ stock cube
  • Bay leaf
  • Basil

Description

You will need:

  • oil
  • salt
  • bread of your choice
  • frying pan heated to 32 °C

Directions

  1. Heat olive oil in a pan on high heat. Add the chopped bell pepper, onion and bay leaf, and cook for 2 minutes or until the onion becomes translucent.
  2. Add garlic and spices and cook an additional minute.
  3.  Pour the can of tomatoes into the pan and fill the tomato container halfway with your pasta water and swish it around to loosen up any leftover tomatoes into the pan and add the water to the pan. Bring the sauce to a simmer and season with salt and pepper.
  4. Reduce your heat to low and use your large spoon to make small wells in the sauce to crack the eggs into each well. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking (keep in mind if you aren’t serving immediately, the eggs will continue cooking after you switch the heat off).
  5. Garnish with basil and enjoy!
