Strawberry Cream Cheese Cake


This cake is definitely one of our favourites and for good reason. Light, airy and moist, it is a treat for anyone. This is one of those cakes that pretty much everyone enjoys and the fact that it is so easy to make fast tracks this cake straight to our heart!

  • 114g cream cheese
  • 1/3 cup butter
  • ½ cup +¼ cup sugar
  • 2 eggs
  • 1/3 cup Greek yohurt
  • 1 tsp vanilla essence
  • 1 cup flour
  • 1 tsp baking powder
  • ¼ cup cornflour
  • ¼ tsp salt
  • 1 ½ cups strawberries


You will need:

  1. Preheat oven to 176°C. Butter and flour an 8 inch spring form pan or use cooking spray, instead. Leave aside.
  2. In medium dish combine flour, corn starch, baking powder and salt. Leave aside.
  3. In a large dish, mix cream cheese and butter with an electric mixer on medium speed for about a minute.
  4. Add 1/2 cup sugar and mix some more, until it is light and fluffy.
  5. Add one egg at a time, vanilla extract and Greek yogurt and continue to mix, slowly adding dry ingredients.
  6. Mix some more until you get fine dough. Give the strawberries a quick toss in a few tablespoons of flour and shake off the excess flour. Place some strawberries aside for decoration after baking.
  7. Add the rest of strawberries in the dough and mix well. Spread evenly in the spring form pan. If you are making cupcakes instead, place your cupcake cakes in a muffin tray and fill halfway to ¾ of the cupcake case.
  8. Take the strawberries that you left aside and place them on the top of the cake. Sprinkle the ¼ cup of sugar on top.
  9. Bake for 35-40 minutes or until a toothpick inserted in the middle comes out dry or with a few crumbs.
  10. Take out of the oven and leave to cool in the springform pan for a few minutes.
  11. Transfer cake to a wire rack to cool down completely. Serve with some strawberry sauce or whipped cream or enjoy it on its own!
